I was reluctant to use a pressure canner but after reading the directions very carefully...I got over my fears and now there is no going back to the water bath canner. It's much quicker and you can process more jars at a time.

Amazon purchased Presto Pressure Canner, (What's this?) This is a great product for home canning. Easy to use is light weight and easy to store. The price was very good on Amazon about $20.00 cheaper compared to the price at my local stores. I am happy with my purchase and would recommend this product.
Presto 23 quart pressure canner, When comparing this Presto model to the similar All American model, the All American appears to be so much better constructed. So much so, that after placing the order I began wondering if I had done the right thing. When I received my Presto last week I was absolutely stunned as to how well it is made. For whatever reason, the pictures do not do the product justice. It works perfectly. As for the gauge accuracy issue, I also purchased the 3 piece weighted regulator set for $11.99. The regulator rocks precisely in sync with the gauge so it serves as a reliable verification. Down the road you might be looking at replacing the rubber cover seals but at LESS THAN HALF THE PRICE, choosing the Presto is a no brainer.
The best bang for the buck, I'd been thinking about getting into pressure canning for years, and I had decided to keep saving my pennies until I could buy the All-American (All American 921 All-American 21-1/2-Quart Pressure Cooker/Canner), but then I found a great deal on this Presto 23 qt. unit that I just could not pass up...and I'm glad I did. It's a very well made canner--nice thick aluminum construction, positive lock, and redundant safety features. It's heavy duty without being too heavy. The option of using either a pressure gauge or a rattler weight is very convenient. The unit ships with a pressure regulator weight for 15 lbs., but others can be purchased (5, 10, 15 lbs., Presto Pressure Canner Pressure Regulator) if you don't trust pressure gauges.
My initial decision to go for the All-American really came down to not wanting to rely on the gasket on the Presto unit to seal, but the gasket works well and will last for years. The Presto unit also cools down more rapidly than the heavier All-American (and requires no screwdrivers or other prying implements to open), so if you do back-to-back batches, that is a significant advantage. All of that said, the All-American is a beautiful brute...
I recommend purchasing a second canner rack (Presto Cooking/Canning Rack for Pressure Canner) with the unit. It ships with one, allowing processing 7 qts. or 10 pts., but with an additional rack, you can process two layers of pt. jars. (Note that you could use a variety of other racks for this purpose, but the Presto rack is just the right size and is very convenient.)
Regulating pressure on the unit is not difficult. By the second run, I could keep it right at 11 lbs. with no problem at all. My 7 qt. wire water bath canning rack just fits in this pressure canner (Norpro Canning Rack), which was a pleasant discovery.
Great pressure cooker, (What's this?) I recommend this pressure cooker, it's great for cooking and sterilizing things. The pressure gauge is easy to read and helps adjust it to the desired PSI.
Great Canner, Great Price, (What's this?) I try to obtain 70% of my family's food from local sources, including my backyard. This requires me to have a big, high quality canner so we can store up for winter. It fits so many quarts that most days I only need to do one batch. But, if space is an issue and you are just doing small batches you can probably get by with a smaller canner.
